Taco Soup

This really does taste better than it sounds but it is a little spicy. You could always add only part of the envelope of taco seasoning.

1 pound ground beef
1 medium onion, chopped
2 - 14.5 oz. cans diced tomatoes, undrained
1 - 14.5 oz. can beef broth
1 envelope taco seasoning
1 - 16 oz. can kidney beans, undrained
1 - 16 oz. pkg. frozen mixed vegetables
Shredded chedder cheese, optional

In a large saucepan cook beef and onion until meat is no longer pink; drain fat. Add the tomatoes, broth, kidney beans, frozen vegetables and taco seasoning. Bring to a boil, then reduce heat and simmer, uncovered, for 10 - 15 minutes. If you want to simmer it a little longer I would wait to add the frozen vegetables until about 10 - 15 minutes before finishing. Garnish with cheese if desired. Yields about 10 servings.
