Chicken Hotdish

My husband's aunt made this for us.  It is full of calories, but it is so good.

Poppyseed Chicken

4 to 6 chicken breasts cooked and cut up (or you can use a rotisserie chicken and use half of it--cut up; or use chicken thighs)
2 cans of cream of chicken soup
8 oz sour cream
1/4 cup diced onion (diced small)
1 garlic clove (diced small or crushed)
1 stalk of celery (optional), diced small
1 tsp poppy seed (if you don't have this, just leave it out--it'll be good anyway)
1/4 cup of water

Crust:
3 sleeves of Ritz Crackers (long sleeves), crushed
2 sticks of butter (softened)

To make it:
Mix the chicken with the soup and sour cream and onion, garlic and celery -- stir together until mixed well
Mix the Ritz Crackers and butter until blended (it may be a little dry, but this is good)

Put half the Ritz Cracker mix, loosely, into the bottom of a 9 x 13 casserole pan
Pour/scrape the chicken mixture into the pan on top of Ritz layer
Put the other half of the Ritz Cracker mix over the top of the chicken layer

Bake at 375 F. for 1 hour
