1lb fresh green beans
1 1/2 Tablespoon Olive Oil
1 Tablespoon balsamic vinegar
salt and fresh ground pepper to taste
2 Tablespoons Parmesan Cheese
Preheat oven to 450F. Wash mushrooms and let drain. Trim ends off beans and cut beans into bite sized pieces.
Place the cut green beans and mushrooms into Ziploc bag or plastic bowl. Whisk olive oil and balsamic vinegar together and pour over, mix until all beans and mushrooms are lightly coated with the mixture.
Arrange in a 13x9 Pyrex dish and bake for 30 minutes. Season to taste with salt and pepper and sprinkle with grated Parmesan.
